Happy Mardi Gras
Mardi Gras or Fat Tuesday, refers to events of the carnival celebration, beginning on or after the Christian
feasts of the epiphany (three kings’ day) and culminating on the day before Ash Wednesday, which is known as Shrove Tuesday. Mardi gras is French for “Fat Tuesday”, reflecting the practice of the last night of eating rich, fatty foods before the ritual Lenten sacrifices and fasting of the Lenten season.

1 tbsp. extra-virgin olive oil
1 lb. andouille sausage or smoked sausage
1 onion, chopped
1 Green Bell Pepper, chopped
3 ribs celery, chopped
2 garlic cloves, minced
cayenne pepper to taste
2 sprigs fresh thyme or 1 tsp dried thyme
2 tsp. Hot sauce
1 tsp. dried oregano
2 16-oz. cans red beans
Freshly ground black pepper
cooked white rice, for serving
1 tbsp. Sliced green onions, for garnish
In a medium pot over medium heat, heat oil. Cook sausage until slightly browned.
Add onion, bell pepper, and celery and cook until slightly softened, about 4 minutes.
Add garlic and cook until fragrant.
Add cayenne, thyme, hot sauce, oregano and beans and stir until fully incorporated.
Simmer for 10 minutes, until beans are fully heated, then season with salt and pepper.
Spoon over rice and garnish with green onions. Serve & Enjoy.
